Our 2023 Cabernet Sauvignon displays a deep ruby color. The nose opens in a restrained manner, initially revealing notes of dried herbs and bay leaf before unfolding into a more expressive bouquet of blackberries and cassis layered with baking spices and oak-derived nuances of licorice, cedar, and leather. On the palate, the wine begins with a slightly granular attack that lends structure, opening into a mid-palate of blackcurrant, dried herbs, and tobacco, with impressive texture, depth, and length.
Rich fruit, savory complexity, and well-integrated oak create a balanced and expressive profile. This mouthwatering 2023 Cabernet Sauvignon possesses all the attributes necessary to age gracefully, promising even greater complexity and elegance with time in bottle.
Sourced from our estate vineyards in the Rogue Valley, located at the
northern end of Southern Oregon. With south-facing slopes at elevations of
700–1,800 feet, the site's ancient volcanic and alluvial fan soils provide
excellent drainage and nutrient-rich conditions, ideal for producing
structured, premium Cabernet Sauvignon.
After de-stemming, the 100% Cabernet Sauvignon grapes are gently crushed
into stainless steel vats. Fermentation begins with methodical aeration at
moderate temperatures to extract soft tannins and color. As maceration
progresses, pump-overs are reduced to preserve finesse. Once optimal
mouthfeel is achieved, the grapes are gently pressed and barreled down. The
wine was aged for 16 months in French oak, of which 25% was new oak, to
enhance complexity and balance.
