Summer is here, and nothing says summer quite like BBQ. But real BBQ isn’t just grilling—it’s a slow cooking process that uses indirect heat, often enhanced by wood smoke. Brisket is one of those BBQ classics that can seem intimidating, but the secret to a great brisket is simple: time. You can’t rush it. Low and slow is the way to go if you want a tender, flavorful result.
This summer, set a goal to try BBQing a brisket. Although time consuming, you might be surprised at how easy (and rewarding) it can be! Pair this recipe with our 2022 Syrah. You won't be disappointed.
Ingredients:
- Brisket
- ½ to 1 cup beef broth
- Dry rub
Directions:
- Rub your favorite dry rub all over the brisket. Let it sit out for a few hours to come to room temperature.
- When ready to cook, set the temperature to 180° F and preheat with the lid closed for 15 minutes. Insert the probe into the thickest part of the brisket. Place the brisket directly on the grill grates. Close the lid and cook until the internal temperature reaches 160° F, 5-7 hours.
- Remove the brisket from the grill. Increase the grill temperature to 225° F.
- Wrap the brisket tightly in a double layer of heavy-duty aluminum foil, keeping one end open. Pour the beef broth into the opening, then seal the packet.
- Return the brisket to the grill and re-insert the probe. Cook until the internal temperature reaches 204° F, another 4-5 hours.
- Remove the brisket from the grill and let it rest in the foil pack for at least 30 minutes. Unwrap and slice against the grain. Serve with your favorite BBQ sauce. Enjoy!
